Ingredients:
3 lb. cod fillet, cut into large pieces
1.5 liters vegetable broth
2 onions
0.5 carrot
3 potatoes
10 peppercorns, whole
1 stalk celery (with leaves)
1 leek
1 sprig parsley, root and greens
2 T dill, chopped
2 t salt
1/4 t saffron powder
1 lemon, cut into wedges
In large saucepan, bring broth to a boil. Add salt, peppercorns, potatoes,
carrot and parsley. Boil for 5 minutes. Add onions and leeks, boil for
another 3 minutes. Strain, then return the broth to the pan. Add cod and
boil for 8 minutes. Add the celery and saffron; boil for 1 minute. Serve
with lemon wedges.
It is not clear what part of vegetable carbs remains in the broth after
the straining, but there should be very little.
