Hawaiian-Style Fillet of Sole Salad
Ingredients
6-ounce fillet of sole
5 cups lettuce, shredded
1 1/2 cups bean sprouts
1 cup red and green pepper
1/4 cup carrots, shredded
3/4 cup pineapple, diced
1 teaspoon olive oil, divided
4 teaspoons soy sauce
2 teaspoons garlic, minced, divided
1 tablespoon cilantro
1/8 teaspoon lemon-herb seasoning
2 tablespoons scallions, finely diced (for garnish)
2 tablespoons hot chili peppers, finely diced (for garnish)
Instructions
In a small nonstick saut� pan, heat 1/3 teaspoon
oil. Add 1 teaspoon garlic and cook for 1 minute. Saut� sole in same
pan, 2 to 3 minutes per side, until it flakes easily. In salad bowl,
combine lettuce, sprouts, peppers, carrots, and pineapple. In a small
bowl, whisk together the remaining oil, garlic, and soy sauce. Pour
over vegetables and toss to coat. Flake sole and add to salad. Sprinkle
with chopped lemon-herb seasoning, scallions, chili peppers, and
cilantro.
